No time to make breakfast in the morning that gives you a lot of energy for your mid-morning? This recipe of courgette fritters is easy and delicious to make. You can even make it the day before and warm up later.
1/4 cup of gluten-free flour
1 tbsp of olive oil
Salt and pepper
Shred the courgette, in a large bowl combine the courgette with flour, egg and season with salt and pepper. You can add some herbs or spices if you live such as paprika.
Heat olive oil in a cooking pan over medium-high heat. Scoop a tablespoon of batter for each fritter, flattening with a spatula, and cook until the underside is nicely golden brown, about two minutes. Flip and cook on the other side, about 1-2 minutes longer.
Serve on a plate with some fruits, you can also put on the top of the frittata some salmon or avocado.
